Cape May Winery & Vineyard

October 24th 2021

Harvest is underway and the fermentation has begun. Right now our tank room is jam packed with fermenting grape juice that will soon become finished wine. After we harvest our grapes we crush, sort and process them into different stainless steel tanks where, once the juice reaches a certain temperature, we add yeast. Adding yeast to a substance for fermentation is a process called “inoculation.”
The yeast are now happy. The “food” is the sugar compounds within the juice and once the yeast eat the sugar they multiply and produce alcohol and carbon dioxide. This process goes on until there is no sugar left in the tank and the liquid is considered wine.
White wine will complete fermentation and stay in the tank room for filtration. Red wine will be pressed, settled ad racked into barrels for aging.
