Sunday Dinner Recipe Vol. 3

In preparation for Easter Sunday Brunch, here is Chef Mike's famous Brioche French Toast! It is best to get this prepared the day before.
Our suggested wine pairing is our Isaac Smith White Port Spritz.

French Toast with Candied Walnuts and Fresh Whipped Cream

French Toast Batter Grocery List:
Eggs- 8 each
Heavy cream- ½ cup
Vanilla extract- 1 teaspoon
Powdered sugar- 1 teaspoon

Easy Preparation
Mix all ingredients well


Candied Walnut Grocery List:
Walnut halves- 1 cup
Isaac Smith Red Port- 1 cup
Pure maple syrup- 2 cups or enough to cover walnuts

Preparation:
*Rinse walnuts with hot water. In a small pot add port wine and walnuts, reduce over low heat until half the wine has reduced. Add syrup and simmer very low heat for 1 hour.
*Remove from heat and cover, let sit for 2 hours in syrup. After 2 hours strain the syrup into another container. Save syrup for French toast plate. Place the strained walnuts on an oiled and line pan. Cook at 250 degrees for about an hour. Nuts should be a dark color but not burnt. Let cool.


Whipped Cream Grocery List:
Heavy cream- 1 pint
Vanilla extract- 1 teaspoon
Powdered sugar- 1 teaspoon

Preparation:
*Place all ingredients in a mixer and whip at low speed until begins to thicken. Once it begins to thicken you can speed up to medium. Whip until thick and forms peaks.
*Remove and reserve


Let’s Put it Together Now!

*I like to use thick cut brioche loaf. Either cut in circles or leave whole (cut in half whencooked). Dip the bread into the batter, be sure to totally saturate.
Lay on a pan and let 
absorb for at least 1 hour. Overnight is best.
*Once it sits, heat a pan over medium heat. Place butter in pan and allow to melt. Lightly Brown both sides of bread.
Place on a cookie pan and cook in 350 oven for 10 minutes.

*Once finished lay neatly on a plate. Top with fresh berries of your choice.
*Place a couple dollops of whip cream on top.
*Drizzle the delicious CMW port/maple syrup all over.
*Garnish with fresh mint
* Place the candied walnuts all around.

*Sprinkle with powdered sugar

Isaac Smith White Port Spritz 

Grocery List:
Yields 1 Liter
1 orange, squeezed
20 oz. tonic
12 oz. Isaac Smith white port

To Serve:
Light ice, slap mint and rub around rim, drop mint in glass then garnish with orange slice
