After two years of aging in 25% new French oak and 75% second-fill French oak, the wine finishes with woody tannins and lingering acidity for a lasting impression.
This dry Cabernet shines with the best of New Jersey flavors. Pair it with grilled Jersey tomatoes stuffed with herbed goat cheese, roasted Kennett Square mushrooms, or a sharp New Jersey cheddar. From the sea, it complements seared Cape May scallops in a savory pan sauce, while heartier dishes like braised short ribs or rosemary lamb chops bring out its depth.
